The first birthday celebration of the year is upon us, and it just so happens to be our puppy Ava’s very first birthday….like ever.
She’s a Redbone Coonhound (think Where The Red Fern Grows), who we picked up when she was just 8 weeks old.
Years before meeting her, I had begged and begged Grant for a puppy, but it was never the right time, especially since we lived in a tiny apartment. When we finally got a home with a yard, the stars aligned, and I started looking for the perfect sweetie to call ours.
A friend raved to us almost daily about their coonhounds, and as I researched the breed, I fell more and more in love.
Fast forward to making the trek to Northeast Tennessee, and locking eyes with the prettiest girl in the world, Ava Marie. She has been making our lives infinitely more interesting ever since.
Birthdays have always been a big deal to me, and when it came time to celebrate our sweet girl, I knew I had to do something special for her. Hence, these Peanut Butter Pupcakes were born.

We started by preheating the oven to 350 degrees, and mixing all the wet ingredients (egg, peanut butter, oil, and vanilla) together to combine in a large bowl. It’ll already be smelling divine, but resist the urge to dip a finger in (if you can).
Next, we shredded some carrots using a grater, but I imagine a food processor would work nicely also.
Add the carrots to the wet mixture, along with flour and baking soda until thoroughly incorporated. Our batter was a little tough, so we put in just a small amount of agave nectar. Maybe even a scoop or two of applesauce if that’s what you have on hand. It’s not so much about the sweetness it adds, but about giving a better texture to the batter.
Once the batter was complete, we sprayed jumbo muffin tins with some cooking spray, and poured the mix into 3 of the wells. After about 30-40 minutes in the oven, they were filling the house with intoxicating smell of warm peanut butter. I can’t attest to how they taste, but you will be tempted to take a bite. Just try to save some for the pups, OK? 🙂
To make them more “pupcake-y” if you will, we smeared a healthy serving of peanut butter over the top, and placed Three Dog Bakery’s Strawberry Cremes on top. Don’t forget the sprinkles!
