When you hear the word salad, it’s natural to think of the bland, tasteless bowls of lettuce that is often associated with dieting or “eating better.” I know a few short years ago, if a salad wasn’t loaded down with cheese and hard boiled egg, I didn’t consider lifting the fork to my mouth. With the bounty of summer at our finger tips, we no longer have to eat our salads begrudgingly because they can actually taste amazing and leave you feeling satisfied. That’s why we concocted a list of drool-worthy summer salads that you’re sure to love as much as we do!

One of my bucket list destinations is Greece. If I get to travel there vicariously through this salad in the meantime, that will be fine with me. The perfect light dinner, side to a grilled protein, or even a make ahead meal prep for the work week, this one does it all!

Marinated Tomatoes and Mozzarella

10-year-old me would be shocked to discover that I don’t hate tomatoes anymore, specifically the heirloom variety, and boy would they go amazingly with this salad! These divine tomatoes go for a little swim in a marinade of herbs, shallot, and red wine vinegar. Finally, they get to snuggle up with fresh mozzarella. Tomatoes & cheese, does it get much better?
